
Okay…I have heard a cry from the interwebs demanding I share the chili recipe that Jesse James himself loved so much. so, I am going to give it a go. But please understand I cook on the fly for these 4 kids of mine and don’t really use recipes. I wing it so I always kind of eyeball amounts. I am going to do my best to translate this into an actual recipe someone could follow and duplicate but understand amounts should always be to your own personal taste. I think that is the only way to cook anything anyway. Just fudge it how you like it. But here goes:
2 pounds 90% lean or better, organic ground beef
2 large onions, chopped (yellow or red depending on your preference)
2 jalapenos, seeded and diced very fine (less if you like it less spicy)
1 carrot, diced very fine
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped (I sometimes leave out all the bell peppers, depending on my mood)
1/4 cup chili powder, toasted
2 tsp ground cumin
1 tbsp chopped garlic (more if you really like garlic)
2 large cans chopped tomatoes
2 cans of pinto beans, drained
1 can of black beans, drain (you can add more beans if you prefer them, no beans or only beans if you don’t eat meat)
1 small can tomato paste
salt and pepper to taste
olive oil
Put a heavy bottomed dutch oven on medium high heat. Just coat the bottom with olive oil and heat. Add the carrots and onions and cook until lightly caramelized, about 5 minutes or so. Add the bell peppers, garlic and jalapenos and cook until softened, about another 3 minutes. Add the ground beef and saute until browned.
Add the toasted chili powder, cumin, salt and pepper to the beef mixture and stir until incorporated. Then add the chopped tomato (juices and all) and the drained black and pinto beans bring to a boil. Once bubbling, lower the heat to low and simmer, uncovered, for about an hour, stirring often, until reduced by about 1/3rd. If the mixture doesn’t thicken up enough add the tomato paste to thicken, but only use this if the mixture doesn’t thicken on its own enough.
Serve with cornbread…if you want the cornbread recipe let me know and I will post that too!

Okay so I follow you on twitter and I am a chili lover. But if you would like my recipe for chili it is a little easier but I am also feeding less and its a little bit spicy. But I will def. Try yours cuz you never know mine has come from a mixture of atleast 3 people and sometimes you just need something different

I’m a HUGE poker (and Annie Duke) fan and wish ESPN would quit rerunning old 2007 WSOP events every weekend. Same for Poker After Dark. It’s the end of April, and I think they’ve aired maybe 4 weeks of new programming all year.

We tried the turkey meatballs last week and I ended up having to make a double batch of them because the husband ate them all. I am actually cooking the chili right now and it looks and taste delicious.
My husband and I are trying to eat healthier and these recipes are cheap, easy and healthy, we used organic beef, and it perks up the flavors even more.
